We make our all-natural cheese using the same Italian recipe used by Philpott Goat Dairy for over 36 years. The ingredients are simple: raw goat milk, salt, rennet and chili peppers from Pueblo Colorado.

When cheese is made with raw milk it inherits many flavor components lost during pasteurization which is one of the reasons we believe that our cheese has some of the best flavor on the market. The quality of the milk used to make our cheese is of utmost importance to us. One of the ways we get that good quality milk is by raising our own goats and giving them feed from what we grow here on our farm.

We sell our goat cheese by the whole wheel and half wheel. Due to the natural variations that result from making cheese by hand in small batches, whole wheels can weigh anywhere between 1.7 -2.2 pounds and half wheels between 0.8 - 1.2 pounds.
