We make our all-natural ricotta cheese using the same Italian recipe used by Philpott Goat Dairy for over 36 years. The ingredients are simple: raw goat milk and rennet.

Fresh cheese that is made with raw milk is hard, if not near impossible, to find. We can produce this cheese because our farm, Yoder Family Farms, is one of two farms in Colorado grandfathered into manufacturing cheese in this way.

When cheese is made with raw milk it inherits many flavor components lost during pasteurization which is one of the reasons we believe that our cheese has some of the best flavor on the market. The quality of the milk used to make our cheese is of utmost importance to us. One of the ways we get that good quality milk is by raising our own goats and giving them feed from what we grow here on our farm.
